If bran is not available at all, it can be replaced with ground flax or chia seeds. They not only provide fiber, but also contain beneficial omega-3 fatty acids, which makes them even more valuable in the diet. Such seeds can be added to dough or porridge, but it should be noted that when in contact with liquid, they form a slimy mass and can change the texture of the dish.

Whole grain products are also considered a suitable substitute. Adding whole grain flour instead of some of the wheat flour brings the composition of the baked goods closer to that of those made with bran. A similar effect can be achieved with oat, buckwheat, or barley flakes, which can be ground and added to dough or minced meat.

Psyllium (plantain seed husks) can be used for additional fiber enrichment. It actively binds water and makes baked goods fluffier, which is why it is especially popular in gluten-free cooking. However, it should be used in smaller quantities than bran, as it has a high swelling capacity.

Thus, wheat bran can be easily replaced with other types of bran, seeds, whole grain products, or psyllium. The specific choice depends on the recipe and the desired effect: neutral taste, dough density, or additional health benefits.
