Firstly, take a pan and put or over medium heat. Now, pour 1 tbsp oil and heat it. Cook sausages for 5-6 mins until you see golden brown color, then set aside on a plate.

Now, add onion, carrot, and garlic to the same pan and cook for a few mins and until the onion has softened. It's time to add curry powder into it and keep stirring for approx 30 sec until see fragrant. Add fruit chutney and stock and cook for a min.
Now, add the sausages into it and cover with lit for boiling. Reduce the heat medium to low because when you cook on a low flame the food tastes more delicious.

Simmered the heat and uncover the pan and cook for 25 mins or until sausages are cooked through and sauce thickens.
