GARLIC BUTTER MUSHROOMS:

Step 1.
Take a large heavy-based frying pan and add 1 tbsp oil along with half butter and cook over high heat.
Once melted add half the mushrooms and cook until you see golden browned mushrooms.

Now add 1/2 the garlic, 1/4 tsp each salt and pepper then continue to cook until golden brown. Then, remove from the pan to the bowl.

Repeat the same process with the remaining mushrooms and remove them from the pan to the bowl.
RISOTTO:

Step 1:
In the same pan, melt butter then add garlic and onion, cook over medium heat.
Cook for 2 mins until onions are translucent but not golden brown.

Now add wine and allow to simmer for 2 mins, scraping the base of the pot until mostly dried out.
Add rice and stir for 1 min until semi-translucent.

Step 3.
Add about 1.5 cups stock. stir, then leave for 3 mins, stirring occasionally until mostly absorbed.
Repeat this thrice more until all the stock is used up, rice is just cooked but risotto is still creamy and sloppy

Add cream and butter, stir fast to make creamy.
Stir in parmesan, salt, and pepper.

Stir through half the mushrooms, then taste and add more salt and pepper if needed. Make sure the consistency should be creamy.
Reheat remaining mushrooms.

Spoon the risotto in a serving dish and top with mushrooms. Garnish with parsley and extra parmesan.
