This is a delicious vegetarian alternative to traditional Chilli Con Carne. Even after having lots of veggies but not any meat, contains a real flavor punch. It is pretty easy to make the recipe. You can serve it with Pitta Bread and Sour Cream.
Firstly, you have to heat the oil in a frying pan over medium heat. Add chopped onion and garlic and cook them for 4-5 mins until soft and translucent.
Now add, red chilli cumin, paprika and chilli powder and cook for a few mins. It's time to add soya mince and cook for further 3 mins.
Add the chopped tomatoes, tomato purée, vegetable stock, peppers, and carrot, and bring all these ingredients to boil. From here, you have to reduce the heat from medium to low for about 10 mins and slowly stir ingredients occasionally.
Now, add already drained kidney beans and cook for 5 mins. Make sure your recipe has a thick consistency. You can add cornflour diluted with 1 tbsp of water to make it thicken. Now, cook for a further 5 mins and your Healthy Homemade Vegetable Chilli Con Carne is ready to serve.
You can serve it with pitta halves, sour cream and grated cheese.
