Graduation Project by Eric Morgan.
Eric created an original fruit salad with herb dressing, demonstrating creativity and the ability to combine unusual flavors. The project demonstrates not only basic cutting and ingredient preparation skills, but also an understanding of the balance between sweet and sour flavors, as well as a harmonious combination of textures.
Features of the dish:
- Fruit: a variety of seasonal fruits are used – strawberries, kiwis, mangoes, grapes, and apples. Each is carefully cut to create visual contrast and a pleasant texture.
- Herbal dressing: a light sauce based on mint, basil, or lemon balm with the addition of lemon juice, which emphasizes the freshness of the fruit and balances the sweetness.
- Flavor combination: the sweetness of the fruit contrasts harmoniously with the refreshing tartness and light herbal notes, creating an unusual and refreshing taste.
Technique and presentation:
- Carefully cut fruit into different shapes: cubes, wedges, slices for visual appeal.
- The dish is served on a transparent or white plate/bowl, decorated with fresh herb leaves and, if desired, edible flowers.
- Special attention is paid to the composition: the colors of the fruit are distributed evenly, creating a bright and aesthetic look.
Purpose of the work:
- To demonstrate skills in working with fruit and herbs.
- To learn how to combine flavors and textures to create a harmonious dessert or appetizer.
- To develop aesthetic taste and the ability to beautifully decorate dishes.
Teacher’s comment:
Eric boldly experimented with flavors. The result is a harmonious and original dish that is both pleasant to eat and look at.
