  • 1/3 cup Coriander leaves (Chopped)
  • 400 g Can Soy Beans (Rinsed)
  • 310 g Corn Kernels (Rinsed)
  • 1/3 cup Peanuts (Finely Chopped)
  • 1/4 cup Lemon Juice
  • 1/4 cup Sweet Chilli Sauce
  • 2 tsp Soy Sauce
  • 2 tsp Vegetable or Peanut oil
  • 8 Iceberg Lettuce Leaves (Trimmed)
  • Lemon Wedges (to Serve)
Healthy Homemade Vegetarian San Choy Bow Recipe Instructions:
  1. Step 1.

    First, you have to soak noodles in boiling water in a large bowl. After 5 mins, stir to separate strands then drain. Cut noodles strands into small lengths and put them into a large bowl. 

  2. Step 2.

    Now add onion, carrot, sprouts, coriander, beans, corn, and peanuts to noodles to combine everything together. Use the toss method of combining otherwise noodles will stick to one another and be mashed out. 

  3. Step 3.

    Add sauces, oil, and lemon juice in a bowl and drizzle lightly over the noodle mixture, and toss to combine.
