First, you have to heat the slow cooker. Take a frying pan, add oil and onion as well. Add some splash of water for 10 mins or until the onions get soft but not colored to a golden brown.
Add mushroom slices and stir until they start to soften and release their juices.
Meantime, pour the vegetable stock into a saucepan and add porcini, bring to a simmer and then leave to soak.
Now, pour the mushrooms and onions into the slow cooker and add rice, stir well so that everything gets mixed up.
Pour over the vegetable stock and porcini leaving any bits of sediment in the saucepan.
Cook high for 3 hours, stirring halfway. The rice should be cooked. If it needs a little more liquid, stir in a splash of stock. Stir in the parsley and season with parmesan.
