Here, we are come up with Healthy Homemade Gluten-Free Sticky Date Pudding Recipe. This recipe is chunkier than some because we don't blitz the date mixture. If you want to make a cake-like texture, blitz the date mixture well. You can simply store this sticky date pudding in the refrigerator and reheat it easily.
First, you have to preheat the oven to 350°F (180°C) simultaneously grease and line 8x8 deep pan.
Now take a bowl with water, add dates and baking soda, bring them to boil.
Take another bowl, add cream, butter, vanilla essence, and sugar, whisk them together until it's light creamy in color.
Now add eggs one by one and beat well between each addition simultaneously add flour and date mixture and mix well gently until everything gets combined.
Place this batter in an already prepared oven dish and bake for 40-50 mins or until a skewer comes out clean.
Meantime, add brown sugar and butter to a pan and put it over medium heat. Once it's melted properly and well combined, add thickened cream. Simmer for 3-5 mins while stirring.
