Healthy Homemade Cob Loaf Spinach Dip Recipe Ingredients:
  • 1 tbsp Olive Oil
  • 2 Large Red Onions (Halved and Thinly Sliced)
  • 2 tbsp Brown Sugar
  • 1 tbsp Balsamic Vinegar
  • 1 Garlic Clove (Crushed)
  • 2 Bunched of Spinach (Trimmed and Roughly Chopped)
  • 1 Large Cob Loaf
  • 250 g Cream Cheese Softened
  • 300 g Sour Cream
  • 1/2 cup Grated Cheddar Cheese
  • 2 tbsp Basil Leaves (Chopped)
  • 4 Rashes Finely Chopped Bacon (Optional)
Healthy Homemade Cob Loaf Spinach Dip Recipe Instructions:
  1. Step 1.

    Take a large frying pan and heat the olive oil. Now, add red onions and stir occasionally for 5 minutes or until golden and caramelized. 

  2. Step 2.

    Add garlic and spinach and cook for 3-5 mins as well as stir occasionally.

    Preheat oven to 180°C to 160°C fan-forced. Now, cut a 3 cm slice from the top of the loaf and set it aside. 

    Make this loaf a hollow loaf by cutting from the center that resembles a bowl so that you can easily fill it. Cut the extra removed bread into cubes. 

  3. Step 3.

    Take a large bowl, add sour cream and cream cheese together and stir well until smooth. Add onion mixture, cheddar cheese, and basil. Season with salt and pepper. 

  4. Step 4.

    It's time to spoon into the loaf and replace the lid. Place into a large baking tray with bread cubes. Bake for 15 to 20 mins or until the filling is warm. 

    If you want to add bacon do so in step 1. when also cooking onion, garlic, and spinach.
