This Healthy Homemade Chicken and Mushroom Pie Recipe have a twist. We have used double cream with white wine to give richness to the filling. This recipe can be served with creamy mashed potatoes and plenty of freshly cooked green vegetables such as peas, spinach, and broccoli.
First, you have to preheat the oven to 200°C (400°F). Take a saucepan and heat the butter. Add chopped onions and cook over medium heat for 5 mins.
Add mushrooms that you have already halved and cook for further 5 mins.
Add garlic and thyme and fry for 3 mins. Stir in the flour and cook, stirring for a further 5 mins.
Now, add white wine and chicken stock together, bring them to boil and simmered until thickened.
Stir in the chicken, simmer for 5 mins, add the cream, and season.
Spoon into an ovenproof pie dish and top with circles. Trim the extra hanging pastry and brush with beaten egg. Top with a sprig of thyme. Bake for 15 mins until risen.
