First, you have to preheat the oven to 350°F (180°C). Line a 9-inch x 5-inch loaf pan with a piece of parchment paper. Slightly brush the paper with oil or butter so that bread won't stick to it.
Grate zucchini finely and squeeze out its water using a cheesecloth or by pressing them with your hands. Measure the amount of grated zucchini according to the recipe requirement.
Take a large mixing bowl and add almond flour, coconut flour, sugar-free crystal sweetener, baking powder, and spices such as cinnamon, nutmeg, and ginger. Set aside.
Stir in wet ingredients such as beaten eggs, vanilla, and melted coconut oil. Stir them together at least for 1 min until you see a thick consistency like a cake batter.
Stir in grated zucchini. Make sure there is no liquid left and they are dried. Add some chopped walnuts and chopped pecan nuts. Reserve some pecan nuts to decorate the top of the bread.
Transfer this batter to an already prepared loaf pan and decorate the top with reserved pecan nuts and press the nuts gently to make sure they stick to it while baking.
It's time to bake and make your delicious keto zucchini bread. First, you have to bake it in fan-bake mode, in the center rack of the oven for about 50-60 mins in total. After 30 mins cover your bread with tin foil to avoid burning the top of the bread.
After 50 mins check the doneness of the bread using a skewer in the middle of the bread. If the skewer comes out clean, your bread is ready. Otherwise, you have to bake for further 10 mins. and check again.
When it's done, don't slice it. Have patience and wait for at least 3 hrs or overnight to get the perfect slices.
