Easy Homemade Victoria Sponge Cake Recipe Ingredients:
    For Cake:
  • 235 grams Butter (Unsalted)
  • 235 grams Caster Sugar
  • 4 Eggs (Large)
  • 235 grams Self raising Flour
  • 1 teaspoon Vanilla Extract
  • For Filling:
  • 170 grams Jam (Strawberry or Raspberry)
  • 300 milliliters Double Cream
  • 1 tablespoon Icing Sugar (Optional)
  • 1 teaspoon Vanilla Extract (Optional)
  • For Decoration:
  • 1 tablespoon Icing Sugar
Easy Homemade Victoria Sponge Cake Recipe Instructions:
  1. Step 1.

    First, you have to preheat the oven to 160°C Fan/180°C/350°F, grease, and line 8" cake tins (must be 2" deep). 

    Now, take a large bowl, mix butter and caster sugar with any type of mixer for up to 3-4 mins or until it gets fluffy.

  2. Step 2.

    Add eggs and vanilla extract and whisk until completely mixed. Gently whisk in the self-raising flour using a hand whisk. Fold in with a silicon spatula and mix until you can't see any flour. 

    Divide the mixture between tins, you can use scales for accuracy. 

  3. Step 3.

    Bake them for 20-25 mins or until they are golden and test with a skewer inserted in the middle comes out clean. Let the tins be fully cool or remove them from the tins and place them on cooling racks.

  4. Step 4.

    If your cakes have domed on top, you can level them off with a knife or you can use a cake leveler. You have to do the same with the bottom layer so that the upper layer can easily stick on the top. 

  5. Step 5.

    It's time to prepare the double cream by whipping it along with the icing sugar and vanilla extract until your get a soft texture. 

  6. Step 6.

    Put one of the cake layers on a plate or cake stand and spread jam onto it. Spread the whipped cream over the jam. 

    Now, add other layers of sponge cake on the top and dust with icing sugar or decorate accordingly. 

  7. Step 7.
