  1. Step 1.

    Add lemon zest, button mushrooms, and tofu and cook until tofu is colored through the paste. 

    It's time to add unsweetened coconut milk and vegetable stock and bring slowly to boil. Simmer gently for 5 mins.

    Take a separate saucepan, bring water to a boil, add noodles for 3-4 mins. Once noddles get boiled, drain it and keep warm.
