First, you have to preheat the oven to 170°C. Grease two baking trays with baking paper.
Beat the butter and sugar together until the resulting compound is fluffy and light.
Now, add eggs and mix well until fully combined. Add already sifted plain flour and baking powder. Stir gently to combine.
It's time to roll the mixture into small balls (2 tsp mixture per ball is enough)
Place the cookie balls onto the baking trays and use the tip of your middle finger to create a small dent.
Now, place a very small amount of jam (any type) into each dent.
Place the tray into the refrigerator (fridge) for 30 mins.
Bake the cookies for 10 mins or until lightly golden.
Leave the cookies on the baking tray for 10 mins, then transfer to a wire rack to cool completely.
