First, you have to take a jug and add warm milk into it. Now, add 1 tsp sugar and yeast to the milk, then stir well to combine.
Leave the mixture aside and let the yeast activate. You may see a thick layer of foam once its activated,
Take a mixing bowl combine 30g caster sugar, plain flour, tapioca starch, xanthan gum, fine salt, nutmeg, allspice, and cinnamon together.
Once the yeast is activated, add the liquid from the jug to the bowl together with a large egg and melted butter.
After mixing a few mins, add mixed fruit and orange zest. Mix again until everything is mixed up properly.
Line a baking tray with non-stick baking paper. Wet your hands so that dough doesn't stick to your hands. Shaping the buns with wet hands and dividing the mixture equally.
Shaping each into a small bun shape. Place them on a baking tray with some space. Leaving some space among buns gives them an independent rise and expansion.
Set aside the buns for about 30 mins (the more time you give them to rise the more they get fluffy) by covering them with a cloth, but make sure the cloth won't stick to the buns.
Once, the buns have risen, preheat the oven to 200°C. Place a pan of water into the lower shelf of the oven. This trick will help to make your buns crust soft as well as save them from too much cracking.
It's time to pipe the crosses into buns. Simply, mix the 20g flour with 20ml water and stir to form a paste.
Now, snip the corner end of a plastic bag and scoop the paste into it. Pipe the flour mixture onto the buns in a cross shape. Then place the buns into the oven to bake for 15 mins.
Combine the icing sugar and orange juice to make a glaze mixture. When buns are done with baking, glaze immediately.
