This Easy Homemade Chicken Pot Pie Recipe is homey, cozy, and will warm you up. It has a flaky pie crust which is loaded with juicy chicken in vegetables and gravy. You must have to try this delicious pot pie recipe to enjoy your weekend with your family and friends.
First, you have to take a saucepan and melt 6 tbsp butter. Add chopped onions and carrots and saute for 8 mins over medium heat until softened.
Add sliced mushrooms and minced garlic and saute for further 5 mins until mushrooms are softened.
Add 1/3 cup of flour and stir continuously for 2 mins so that lumps won't be formed. Add chicken stock, and 1/2 cup heavy cream then bring to a simmer and cook for 1 min or until mixture is a thick gravy consistency.
Now, add 2 tsp of salt, 1/2 tsp black pepper or season to taste.
It's time to add shredded chicken, frozen peas, and 1/4 cup parsley. Stir to combine then remove from heat and cool slightly while you roll out the crusts.
Roll 1 pie crushed disk into a 12" diameter circle. Carefully put over 9" diameter pie dish. Spoon the pie filling over the bottom crust.
Roll the 2nd disk of pie dough into a 10" diameter circle and place it over the pie filling. Just fold the extra dough behind the bottom crust and seal it.
Now, take a small knife and make cuts on the pie so that the steam gets out. Brush the top crust with beaten egg and sprinkle lightly with coarse salt and pepper.
It's time to bake the pie at 425˚F for 30-35 mins or until the top crust is golden brown.
