Here, we are come up with an Easy Homemade Chicken Laksa Recipe. This recipe is super easy to make for your lunch as well as dinner. You just need only 20 mins for preparation and 50 mins for the cooking process. 

Easy Homemade Chicken Laksa Recipe Ingredients:
  • 1 Medium Chicken (jointed into pieces and skinned)
  • 1 tbsp Coriander Seeds
  • 3 cm Ginger (Sliced)
  • 2 Lemongrass Stalks (Crushed)
  • 1 Lime Juice or Zest
  • 2 tbsp Fish Sauce
  • 1 tbsp Low-Salt Soy Sauce
  • 200 ml Light Coconut Milk
  • 3 Garlic Cloves (Sliced)
  • 3 Red Chillies (deseeded and sliced)
  • Handful Coriander (Chopped)
  • Bunch Spring Onions (sliced)
  • 300 g Rice Noodles (Cooked)
  • Handful Mint Leaves (Chopped)
  • 1 tbsp Sesame Oil (Optional)
Easy Homemade Chicken Laksa Recipe Instructions:
  1. Step 1.

    First, you have to take a saucepan and put chicken, coriander seeds, ginger, lemongrass, lime zest, and a little salt. 

    Cover the whole ingredients with water and bring them to a boil over low heat. 

  2. Step 2.

    Slowly poach the heat for 40 mins until it starts to fall away from the bone. 

    After completing this process, put the chicken on a plate and cover it with foil. 

  3. Step 3.

    Leave the stock to stand for 10 mins, skim off excess fat, and strain into a clean saucepan. Separate the chicken from its bones and tear it into chunks. 

  4. Step 4.

    Now, bring back the stock to a boil, then add the fish sauce, soy, coconut milk, garlic, chilies, and coriander stalks. 

    Simmer for 2 mins, return the chicken to the pan and cook for a further 5 mins until warm. It's time to add lime juice as well as spring onions to taste. 

  5. Step 5.

    Your Easy Homemade Chicken Laksa is ready to serve. Divide the noodles into 6 bowls, lift the chicken and veg with the help of a slotted spoon and pour into each bowl. Season and pour over the stock.

    Spread over the coriander and mint leaves. You can also drizzle sesame oil if you want.
