This Easy Homemade Chicken and Leek Pie Recipe is easy to make and a firm favorite in my house. This comforting Chicken and Leek Pie bursting with seasonal flavors. This easy homemade pie recipe is perfect for lunch and dinner. 

Easy Homemade Chicken and Leek Pie Recipe Ingredients:
  • 2 tbsp Olive Oil
  • 1 Large Leek (Slice Thinly into Rings)
  • 1 Medium-Size Carrot (Finely Diced)
  • 500 g Chicken breast
  • 2 Medium Zucchini
  • 300 ml Chicken Stock
  • 1 tbsp Wholegrain Mustard (Optional)
  • 2 tbsp Sour Cream (Optional)
  • 1 Sheet Puff Pastry
Easy Homemade Chicken and Leek Pie Recipe Instructions:
  1. Step 1.

    First, take a frying pan, add olive oil, and heat it over medium heat. Saute the leek in the oil. 

    Now, add diced carrot and saute both leek and carrot together for 5 mins until both are fragrant. 

  2. Step 2.

    Dice the chicken, add this to the frying pan and seal the chicken. Don't cook it until brown because it will perfectly cook in stock that you add next. 

  3. Step 3.

    Now, add the stock and grate the zucchini and add this too. Bring them to boil over low heat. Simmer the mixture for 20-30 mins. You want to reduce the liquid so that it will be the filling of your pie. 

    You'll end up seeing lots of liquid f you don't take this step. Yeah! you may think that there will be not enough liquid, let me tell you for concerned that the zucchini you have added, releases water too. So, be patient and wait for a few mins before adding some extra stock. 

  4. Step 4.

    Once the chicken and veggie mix has been reduced down, turn off the heat and stir through the mustard and sour cream. 

    If you want, you can skip this step. I would like to tell you that I have found the taste of pie delicious with the addition of these last 2 ingredients. 

  5. Step 5.

    Now, grease a pie dish and pour the chicken and veggie mix into the pie dish. 

    Top with puff pastry and pierce with a knife to create some holes so the steam gets out from it. It'll also help to cook the chicken and veggie mix perfectly. Meanwhile, brush the pastry with a little milk. 

  6. Step 6.

    It's time to bake at 200°C for 15 mins until the pastry is golden. 

    Your Easy Homemade Chicken and Leek Pie is ready to serve. You can serve it with mash and some green veggies. It's delicious with a 50:50 cauliflower and potato mash!
