We know that it's not easy to make tasty Veggie Sausage Rolls. Here, we are come up with the delicious meat-free Sausage Rolls recipe that is made with lots of vegetables such as mushrooms, chestnuts, and leeks. Vegetable Sausage Rolls are perfect for picnics and other small events. You can serve it with dips and sauces or with salad for lunch.
Put mushrooms in a grinder or food processor and grind until you get the finely chopped mushrooms for Vegetable Sausage Rolls filling.
Now, take a frying pan and pour the half quantity of olive oil into it, add the leeks a pinch of salt along with it. Fry leeks gently for 10 mins. until you get the soft textured leeks with a golden brown color. Scrapes the leeks out of the pan and put them into a bowl.
It's time to fry mushrooms for 10 mins. over medium heat. Add the garlic, sage, miso, and mustard and fry for another minute, then leave the whole content to cool slightly.
Heat the oven to 200C/180C fan/gas 6. Combine the mixture of mushrooms with leeks, cheese, and breadcrumbs in a bowl. Don't use extra salt because the brown rice miso and leeks have natural salt. Mix everything well until you get a stodgy mixture.
Now, place the puff pastry on a floured surface so that it won't stick to the surface when you are ready to bake it. Roll out the puff pastry so that one side measures about 40 cm. Push the mushroom mixture down the centre of the pastry.
Cover around the mixture with a pastry and seal the edges with a fork, then cut it into 8 pieces. Place all the pieces in a baking sheet and glaze with the beaten egg. Bake in the oven for 25 to 30 mins until deep, golden brown. Your delicious Healthy Vegetarian Sausage Rolls are ready to eat. You can serve it with dips and sauces.
