Best Easy Homemade Vegetable Risotto Recipe Ingredients:
  • 2 tbsp Extra Virgin Olive Oil
  • 1 tbsp Butter
  • 1 Medium Size Onion (Chopped)
  • 3 Garlic Cloves (Chopped)
  • 1 1/2 cup Arborio Rice
  • 1/4 cup White Wine
  • 2 cup Water
  • 2 cup Vegetable Broth
  • 3-4 cup Organic Vegetable Medley
  • Salt & Black Pepper (to taste)
  • 1-2 tbsp Additional Butter
  • 1/4 cup Parmesan Cheese (Grated)
  • Dash of cayenne Pepper
Best Easy Homemade Vegetable Risotto Recipe Instructions:
  1. Step 1.

    Take a medium-size pot and put it over medium-high heat. Add olive oil, butter and let it heat. 

    Now, add chopped onion and garlic. Saute for 2 mins until the onions are soft and translucent. 

  2. Step 2.

    In this step, toss in arborio rice and a dash of cayenne pepper. Stir the rice for about 1 min. 

    Pour in the white wine and stir the rice for a few seconds so that it will absorb quickly. 

  3. Step 3.

    Once the wine is absorbed, pour in 2 cups of water. Now, lower the heat to medium so that the mixture comes to a boil. 

    Stir for about 5 mins until water is absorbed. 

  4. Step 4.

    Pour 2 cups of vegetable stock and bring it to a boil over low heat. Allow the rice to cook and simmer for additional 3-5 mins. 

  5. Step 5.

    Just before the liquid is absorbed completely, toss in the medley of vegetables and lower the heat. Stir to combine vegetables with rice. 

    Taste and season with salt and black pepper. 

  6. Step 6.

    If you need to add water content, you can add 1/4 cup of water so that the vegetables get soft to bite. When both rice and vegetables get soft, turn off the heat. 

  7. Step 7.
